An aromatic member of the mint family is a small, widely cultivated perennial plant with narrow leaves and white flowers. It is native to warm temperate regions of Europe and Northern Africa. Not to be confused with its relative, Summer Savory. The essential oil is steam distilled from the flowering plant and has a sharp, peppery, medicinal herbaceous odor. Its color is a clear pale yellow. As a culinary herb, Winter Savory leaves are dried in bunches and then crumbled and sprinkled into and onto foods, and also used as a tea for stomach and intestinal disorders. The leaf is also a traditional ingredient in salami.
The essential oil contains mainly carvacrol (60-75%) and thymol (1.0-5.0%), (phenols which contribute to the oil’s skin irritant properties. Also contains A-pinene, P-cymene, Y-Terpineol, 1,8 cineole, dipentine, and borneol among others.
