Description: The leaves of Cilantro are traditionally used for culinary purposes, as a flavoring agent, aiding digestion and helps calm upset stomachs. Cilantro essential oil is often mistaken for Coriander essential oil, which is the same plant, but Coriander essential oil is steam distilled from the seeds and its aroma is a bit gentler. The aroma of Cilantro is much like the leaves, sharp, with an herbaceous green spice and its color is clear to pale yellow. Both have been used since ancient times as herbs and spices for cooking. An annual herb that comes from the parsley family, growing to approx. three feet high with bright green delicate leaves, umbrels of lace-like flowers producing green (turning to brown) seeds. In addition to using the fresh herb cilantro in my guacamole dip, I always add a drop or two of the essential oil.
The essential oil contains contains a higher percentage of aldehydes (decylaldehyde) than the oil distilled from the seeds of the plant, as well as octanal, decenel, carvone, and linalool, among others. Its properties are analgesic, antioxidant, antispasmodic, anti-rheumatic, bactericidal, digestive, carminative, fungicidal, revitalizing, and stimulant.
Essential oil of cilantro has also been used in natural perfumes. It is commonly mixed with fragrances of citrus and bergamot to make a lingering and pleasant after-aroma.
